Angel Hair Chicken Pasta
Ingredients:
3 skinless, boneless chicken breast halves
2 tablespoons butter
1/2 of a .7 ounce package of dry Italian-style salad dressing mix
1/4 cup white wine
1/2 can of condensed golden mushroom soup
2 ounces cream cheese with chives
1 (8 ounce) package of angel hair pasta

Directions:
In large saucepan, melt butter over low heat. Add package of dressing. Blend in wine and mushroom soup. Blend in cream cheese and stir until smooth. Heat gently. Arrange chicken breasts in a baking dish and pour sauce over. Bake in preheated oven at 325 for 60 minutes. When the chicken is near done, boil the pasta in salt water and the drain well. Serve the chicken on top of warm angel hair pasta.

Taco Soup (Amy’s version)

Ingredients**:

1 lb Ground beef or turkey (I like using turkey)
1 pkg Taco seasoning
1 pkg Ranch dip mix
1 can of each of the following:
Pinto beans
Ranch style beans
Corn
White hominy
Stewed tomatoes (or Rotel)
2 cups water
¼ cup fresh squeezed lime juice
¼ cup chopped fresh cilantro (can be used separately as an optional topping)

**You can substitute any of these ingredients to meet your own taste or to use what you have in the pantry! These ingredients are guaranteed to taste great though!

Preparation:
Brown meat with taco seasoning. Mix all ingredients in a crockpot or large pot. Cook until heated through or let simmer all day!

Add any or all of the following toppings for an even better soup:
Chopped fresh cilantro
Shredded cheddar cheese
Sour cream
Chopped white onions
Sliced jalapenos
Tortilla chips

Another scrumptcious - how the heck do ya spell it?
From Belle.......

So nice to see you Lucy. The chicken is really easy. You can cook it on the stove, but I prefer to use my crockpot...just throw it in there and leave it be. Here is the recipe:
4 chicken breast (if they are large you can cut them in half)
Cream of Mushroom Soup (I usually make it myself, but from a can is good also-use regular Cream of Mushroom or Golden)
Portabella mushrooms (cleaned)
1 tablespoon sherry or white wine (opt)
Wash chicken breast then place them in a crockpot. If using canned soup,stir it around with a whisk until it is creamy (add just a dash of water or the sherry or wine).Add the chopped mushrooms (or you can layer them ontop). Pour on the chicken. With the crockpot on high this will be ready in 2-3 hours- but the longer you let it cook the more tender the chicken will be. On low give it about 5 hours. The last hour and a half of cooking, I place some baby carrots in the crock also. Enjoy....

If we're on the subject of recipes, here's a mighty simple one that's heavy on the delish! I make this salad whenever I decide to get all Italian on my neighbors and friends and make a big dinner- Goes great with pasta and some nice crusty bread...FYI, I RARELY measure or do anything "by the book", so just eyeball the ingredients to your liking, depending on how much you'd like to make-

-Some leafy greens (spinach, radiccio, romaine lettuce, etc)
(I cheat and get the premade bag of greens)
-Pint of grape tomatoes
-About a cup or so of fresh Parmesan cheese, crumbled
-Grilled or roasted chicken, diced(those Shortcuts work great!)
-Handful of string cheese, chunked
-Bottle of Newmans Own Vinegar and Oil
-Generous helping of croutons, whatever flavor you desire

Toss the tomatoes, chicken & string cheese into a bowl along with a generous sprinkling of the dressing- Cover and allow to marinate for about an hour or so....the longer, the better! After the marination, throw in the rest of the ingriedients, toss with more dressing, and enjoy! As Mr Food would say, "Oooh it's so good!"
